You will have to backup Cydia apps (PkgBackup on Cydia), iTunes should take care of all the other data (remember to sync your iPhone to iTunes and let it perform a full backup..).. In-fact remove both Gevey and unofficial SIM card before restoring your iPhone (It never matters if your iPhone has empty SIM tray while you are restoring it).For me, i can use 3G and Wifi and i have no issues.
